The State of Dairy Production in South Africa

Adding to this, water remains a central concern in dairy production. Producing 500ml of milk requires between 1.8 to 2 liters of water. Since milk itself is 87% water, adequate water supply is non-negotiable for ensuring consistent output and supporting the digestion processes of dairy cows.

Rising health concerns have prompted a shift toward products with lower levels of lactose and sugar, while plant-based alternatives continue to gain traction. Additionally, there is growing demand for functional products like protein-rich beverages, probiotics, fermented dairy drinks, as well as new flavors and enhanced textures.

Producers are adapting by leaning into creativity and sustainability—developing products to meet these evolving tastes while addressing broader environmental concerns.
